Lorenzo knows all too well that the only way to achieve this is to use the very best quality products. It is a rule that the restaurant never breaks. Every morning since 1981, Lorenzo has travelled to the quays of Viareggio and Versilia in search of the most flavoursome fish, crustaceans and molluscs. He then meticulously selects the best meat, fruit and veg before entrusting it to Gioacchino Pontrelli, the restaurant’s head chef for many years, whose task it is to transform the raw ingredients and bring out their flavours without betraying their nature. Gioacchino’s technical skill, careful cooking and creative flair add that extra little touch that makes all the difference. This is where the magic happens. And it is a powerful magic that turns each dish into something truly unforgettable.

The Wine Cellar

A great kitchen needs great wines

Besides the kitchen, the wine cellar is the Ristorante Lorenzo’s pride and joy, not only because of the vast number of wines available (almost 2,000), but because these wines come from such far-flung places and so many vintages. Each carefully chosen bottle bears witness to Lorenzo and his daughter Chiara’s passion for the world of wine. The two wine lists – one for Italian wines and the other for wines from abroad – include both the most renowned, celebrated names and the most niche labels produced in limited quantities and only from the very best vintages. Expert sommelier Lorenzo Giannini takes guests on a journey through the best bottles in the world – from Tuscany to Piedmont, Sicily to the Collio Friulano, Burgundy to Bordeaux, Germany to the New World (United States, Australia, New Zealand, etc.) – finding the ideal pairing for each of the dishes on the menu.

Watching over it all is the magnificent collection of contemporary artworks that Lorenzo has passionately built up over the years.
